San Salvatore 1988 was founded in 1988 by Giuseppe Pagano as a project to revive and showcase indigenous Cilento grape varieties. The estate is based in the Cilento National Park near Stio, where vineyards sit between 500 and 600 meters above sea level, and the winery places strong emphasis on organic and sustainable farming. The property is notable for integrating buffalo dairy and regenerative soil practices into its agriculture, and its logo pays tribute to a buffalo that inspired the team. Over the years the winery has worked with well known consultants to refine its Metodo Classico sparkling and single variety wines, while focusing on local varieties such as Aglianico and Greco.
